4 hard boiled eggs,
4 large tomatoes,
100g mayonnaise or yogurt,
100g canned fish (salon or tuna),
8 black olives,
3 large cloves of garlic,
white pepper. 

I got the recipe for these eggs from a book written by Paul Bocuse. This is a great quick and easy snack or light lunch.



1. Cut the eggs in half, remove the yolks. Mash the yolks with yogurt (or mayonnaise). Add crushed garlic. Stir.


2. Add the fish and mix well. Season with salt and pepper to taste.


3. Cut the tomatoes in half, make a dent in the middle by removing the seeds. Now spoon the egg yolk and fish mixture into the egg white, put the egg in the dent in the tomato, top with an olive and decorate with chopped chives. If the tomato is unstable cut the bottom off. That’s it! This great snack or light lunch is ready.
