100g butter at room temperature, 
50 g of parsley.

Compound butter – is a kind of specially prepared butter, which is injected with additives (herbs, garlic, wine, etc.). These butters provide a special sweet taste, color and flavour to sauces, dressings, side dishes of vegetables, meat, and fish.. For example, butter and parsley (parsley butter) is often cut into small pieces and placed on top of meat or fish before grilling, this flavours and bastes the meat as well as making a sauce.

Butter is mixed together in a blender then using plastic wrap is rolled into a cylinder, this is then cooled and then cut as needed. In his book “On cooking” offer immediately procure a half-kilogram of the oil. At 500 grams butter is 250 grams of parsley.



1. Finely chop the parsley. 


2. Mix parsley with the oil, salt and pepper.


3. Thoroughly mix until smooth. We spread in plastic wrap.


4. We roll the butter into a cylinder, then put in the freezer for 10-20 minutes, just until the butter hardens, then move to the refrigerator.


5. The butter is set and ready to use.
